I find brownies need to be just right, warm, moist, and a little chewy. The chocolate needs to taste rich. A slight crust on the top. It's hard to find. Some are too "cakey." Some are too chewy. Some have a bad chocolate taste. Some are too dry. Brownies don't keep long either.

I prefer chocolate mousse. I was given a recipe from my Aunt (who since passed away) and it is awesome. Just choc chips, eggs, vanilla and some water. You are reminding me that I need to make it...again...

I view good chocolate mousse as the Champagne of chocolate.

@maverick1 In remembrance of your aunt, might you be willing to share her awesome recipe? I would be delighted to report on my personal experience-chocolate bite-by-chocolate bite.

Ah, @stilllearning, I'd love to share her full recipe but it's a family secret I waited decades until she trusted me with it. I did list all the ingredients. It's all in the process of making the mousse. You have to separate the egg whites from the yolks and add them at different times to get just the correct "fluffyness." There is whipping and folding involved. That is most of the secret. If you are true master of the kitchen, I gave anyone reading this all the information needed. Think of it as not mentioning the MSC AND the client in the same thread. smiling smiley
For the record, I'm not sharing my grandmother's toll house chocolate chip cookie recipe either. I have some baking to do...hehe.

Baking is all about the process. My spouse can't duplicate the results and she knows the recipe.
