Homemade Rotisserie Chicken in the Oven
This omits all of the sugar and chemicals pumped into the grocery store-made rotisserie chicken and can be customized to your tastes with the rub.
The key to this is SLOW roasting with the chicken places breast down on a roasting rack.
Ingredients:
1 3-5 lb whole chicken, with giblets removed
1 cup of water
2 TBS Canola oil or melted butter/margarine
There are so many enticing recipes for the rub! So make a search and select what suits you. A favorite rub recipe gleaned from your searches for "rotisserie chick in the oven recipes."
Instructions:
Preheat oven to 300 F
Pour the water into the roasting pan
Brush the bird all over with oil or butter
First pat and then gently rub the seasoning mix ALL over the outside of the chicken.
Be sure to use a roasting rack to keep the bird above the drippings.
Roast for 2.5- 3 hours at 300 F.
Check the internal temperature with an instant read thermometer. When that shows that it is "done" remove from oven and completely cover with foil for 20-30 minutes while the juices "settle" before carving.
Reserve the bones, plus those giblets to freeze for making broth in future.
I made this last evening and it was wonderful in taste and moisture.
