They make to order, using liquid nitrogen to flash freeze the ice cream. Because the freezing took a very short time, the result was smoother and silkier-more like frozen custard.

Went on the community college bus tour that was cancelled last week. The tour went to a Mexican bakery, Greek restaurant, Italian grocery store (and at that stop we also had toasted ravioli from a restaurant) and nitrogen ice cream. Needless to say, dinner will be simple!
