Our 'good' mango tree is getting ripe almost a month early this year and the fruit is both prolific this year as well as heavenly with a non-fibrous texture like a good peach and a floral aroma and flavor that is lovely. Yesterday I made mango jam out of the undisturbed sections of a fruit a bird pecked but it lost the floral aroma and flavor. (It was good to baste some chicken I was baking, but on toast it is just sweet.)
Today I will harvest a half dozen fruits and try some other options for canning/preserving them because in the next week or two they will be coming too fast and furiously.
