I cook a pound of bacon at a time in my electric skillet. Yeah, I tried baking it in the oven but it makes more of a mess and it's easy to control the pieces and keep them from sticking together. Someone else told me to microwave it and I tried, but I don't like the way the microwave smells afterward and again, it seems to make more of a mess. My electric skillet is a very quick and easy clean.
I love a great BLT and I will NOT skimp on the bacon! Instead of mayo I use a smashed avocado and I don't even miss the mayo. The tomatoes up here suck in the winter so I won't use them...it's really a BLA instead of a BLTA...though I sometimes will buy grape or cherry tomatoes and put them in my food processor with roasted garlic and a bit of mayo, which makes a very nice aioli spread.
Tonight we are having filet mignon burgers with bacon, sharp white cheddar, greenleaf lettuce, and avocado. I am going to make some potato crisps in the air fryer to go with it. I just put the bacon on a few minutes ago.
But, there will be 1/3 of the bacon left and I put it in a ziplock with a paper towel so I can have it on hand to heat up and go with eggs or something from breakfast.
I have some leftover homemade macaroni and cheese from a few days ago I made with Gouda, white cheddar, fontina, and aged Parmesan (and cream). I was thinking I might heat that up for breakfast in the oven with some crumbled bacon and then fry some eggs over-easy to serve on top, eh?
