Big ol' mash-up salad. It was almost perfect. The shrimp needed more ginger, or something, in order to match a restaurant-style heat. Next time, I will fix that and the hot ginger sauce will be its intended version of the hot sauce that is used on wilted lettuce salad. Otherwise, it was full of color, fiber, protein, texture, and flavor.

I had ground turkey in extra virgin olive oil with fresh garlic and mashed potatoes. I added sour cream. Very tasty
I am making roast chicken with sweet onion, carrots and mushrooms and mashed potatoes. It smells good.
Yesterday, teriyaki chicken and Costco's organic cauliflower stir fry. Tonight, chicken enchilada casserole.
Finishing up the chicken and gravy, with couscous and fresh steamed broccoli as sides.

Corned beef, cabbage, red potatoes, all simmered in the same pot so that the corned beef spices mingle with the cabbage and potatoes, too. Mmmm, good!

I had leftover roast chicken/swt onion/carrots with mashed potatoes. It tasted better tonight..... Probably cuz I didn't have to cook again. Lol smiling smiley
Fast food. Not a shop. Just the thing for a day when at noon I had enough energy to [practically] drool about what I was planning to cook after work-- and when the shift ended, I was a veritable limp noodle.

Tomato Basil soup, grilled Gruyere and Fontina cheese on sourdough bread. Cheese and fruit charcuterie board. Fruit tart. Love that kiwi!

Black bean, ginger and garlic braised tofu. Jasmine rice and baby bok choy. Portuguese egg custard tarts.
Portabella mushroom stuffed with sautéed spinach, garlic and toasted bread crumbs, a side of steamed zucchini, fresh sliced avocado and an Asian chopped salad. (And for some reason tonight, I did not have to clean the kitchen.)
I'm baking some boneless pork chops, mashed potatoes, spinach salad and applesauce. But first I have to get off the couch. Lol
Corned beef, cabbage, carrots, potatoes, the wonderful herbs, and Irish Soda Bread. I could not wait until tomorrow. I hope this is not blasphemous, or something.

Coconut shrimp from Costco, pasta shells with olive oil, spinach and garlic. I over steamed Brussels sprouts. They were mushy and inedible. Should have gone with my original roasting plan.
