I made a stir fry to have for lunch today and tomorrow. It was so darn tasty, I had it for dinner tonight.

I used a pinch of sugar in the sauce. That made the flavors in the curry paste pop!

I made a curry salmon stir fry. I used a different spice paste and the flavor was...heavy. It melded out by the time I ate it.

I thawed out a chicken breast and I have to cook it by tomorrow. Tomorrow morning, I will make a chicken stir fry recipe that I found on the Hidden Valley Ranch website. I made it before and remember it being nothing less than delicious.

Tonight is going to be ginger beef. It's in the crock pot now. The recipe was only a few fresh ingredients.

Enchilada Casserole, a recipe from the Pioneer Woman, definitely a keeper. I put some cooked ground beef with it.
A cold bowl with homemade yellow rice, diced chicken, broccoli, hummus and Kalamata olives.

Green salad with fresh veggies, Amy's Mac & Cheeze (vegan) and taco hummus (it was 25 cents a container on clearance) with pretzels. I finished off the pinot grigio too.

We seem to be waiting each other out to make supper. A long day of doing nothing.
I will start by getting beets from the garden. See if Hubby plans the rest of the meal. LOL

Tonight, I am going to (finally) use my food processor to make riced cauliflower. I will then use that to make shrimp fried rice.

I made roasted jalapeno cilantro pesto with loin pork chop, whole wheat pasta and fresh green salad. The pesto was amazing... will be better tomorrow. smiling smiley
The cauliflower fried rice was a major BUST. I had to grate the cauliflower by hand since the food processor would not power on. I grated maybe 1/4 of the head. It turned to mush in the oil.

The good: it tasted great! It just looked horrible.

I ground my cauliflower too much. When I had cauliflower rice in a restaurant, it was in little chunks, and was quite satisfying.
Angel hair pasta topped with Alfredo sauce, shrimp, mushrooms and broccoli. Garlic bread.
