I made a dish my family has been making for years: sausage, potatoes, and carrots, all with onion soup mix. It's a favorite.

Certainly. I made this when I stayed with metro a couple of weeks ago, and it got his seal of approval.

1 pkg smoked sausage
3-4 potatoes
3-4 carrots
2 envelopes Lipton onion soup mix
2 gallon-size ziploc bags

Preheat oven to 400 degrees.
Peel and chop the potatoes and carrots and slice the sausage, putting half in each ziploc bag.
Add 1 envelope of dry onion soup mix to each bag.
Seal and shake vigorously so ingredients are mixed and coated with soup mix.
Dump both bags into a baking pan and bake for approximately 1 hour. (I like my potatoes and carrots soft and my sausage crispy critter, so I usually do 75-90 minutes. )

Notes:
I chop my ingredients fairly small and stir at 30-minute intervals; after an hour, every 15 minutes. You can stab some carrots and potatoes each time and continue baking until they're your preferred firmness/softness.
I use a disposable aluminum pan; if you use a regular metal or glass pan, you may want to spray it first with non-stick spray.
Adding a small amount of oil to the bags before shaking helps coat everything with the soup mix (I usually skip this to cut down on greasiness.)
Red potatoes (I leave the skins on) can be subbed for brown.
I sometimes use one less potato and add in a can of drained whole kernel (or Mexican/fire-roasted) corn.
Leftovers reheat well in the microwave.

Trying to eat more healthy and get better at cooking my meals. It's been a process. Currently, I'm trying to clear out the kitchen with what we have.

Arugula and spinach salad with lemon, balsamic vinegar, goat cheese, cashews, roasted tomatoes. Fried eggs with cinnamon, goat cheese, hot sauce. Leftover mango habanero rotisserie chicken. Hot green tea with lemon.
That mango habanero rotisserie chicken sounds good.
I'm having leftover Moussaka and spinach pie.

Same salad, but with walnuts. Ribeye on the cast iron skillet with Kosher salt, black peppercorn, butter, rosemary. Cooked tomatoes on the vine after. Cold brew.
Lemon garlic fettuccine, arugula/red onion/tomato salad, Italian bread rubbed with garlic, delicious sliced peaches, bananas, oranges and Granny Smith apples.
Salmon with lemon butter sauce, asparagus in oven with a drizzle of herb infused oil and butter topped with parmigiano reggiano, mashed potatoes with gravy, and a watermelon blonde ale.
Got some quail eggs on sale. Planning to make beef stew with quail eggs, carrots, mushrooms, green chili peppers.

Forgot about some old tuna fillets I had in the freezer. Going to defrost it today, cut it up, and include it in a garden salad.

Tried a new rice pilaf recipe with mushrooms and arugula added to it and using it as a side for different proteins. Tonight was baked salmon.
I always get hungry when I check in this post. So many good ideas. Tried a new soup recipe with cheese tortellini, diced tomatoes, chicken broth, onion, and Italian seasoning. I added sausage for protein, and sprinkled with cheese at the end. It's a keeper.
