What are you having for dinner? AGAIN!

Decided to have breakfast for dinner, so it was 2 sausage links, a soft boiled egg, olive roll and glass of soybean milk.

Chicken breasts with sauteed tomatoes, green peppers and onions. Kabocha squash prepared in my pressure cooker.. The first one in my garden. I see 3 more hanging from the vine. I am thrilled.
Had a big sushi lunch out with a friend. So I was not hungry and knew I had to be good for the earlier splurge. So it was Greek yogurt with a kiwi and pecans as my toppings.
Bruschetta, spaghetti with tomatoes basil, parmesan cheese and grilled zucchini. Everything from the garden except the obvious. Oranges, cherries and banana cookies from Magnolia Bakery.
Mom made 5 delicious, scrumptious tomato pies. Mine are always lacking and bland although I try to mimic hers. Got to drain the tomatoes better. I made sauteed peppers, onions, tomatoes and tofu with black bean garlic sauce served over jasmine rice. My neighbor brought over a huge bag of grapes from her garden. Tomorrow we will concoct garlic and basil butter. I have supplied my neighborhood as well as Mom's with basil, zucchini and tomatoes.
Never tried either dish. Now I have to do some googling and see if I can add some new recipes to my list. Have all the ingredients for the sautéed, just never put them together in one dish.
Eggplant, stuffed tomatoes with asiago, parmesan and mozzarella. Italian bread with basil, garlic butter. Sliced bananas, mandarins, grapes and Lindt truffles.
I made kale and pork chops in the slow cooker. That will be dinner.

Pork Loin, shrimp, and squash casserole all on the pit with 106 temp. I deal with it by keeping my head wet.
chilled pasta salad with broccoli, tomatoes, and cheese. Temps were too hot to cook.
Grilled veggie and quinoa burgers, arugula and tomato salad, juicy mango and strawberries.
Lemon basil penne, bruschetta, arugula with shredded cheese. Red grapes, crackers, sliced cheese later while watching a nice movie.
Spicy shrimp roll sushi and coconut shrimp with chili sauce from Wegman's along with brazilian cheese bread from Trader Joe's and a Peaches and Cream craft beer. It was a quick meal (18 mins in the oven for the coconut shrimp). Restaurant quality food at $11 per person.
Take out via #3; she is my baby angel. Got home and was so not into preparing anything. I got a chicken cutlet hero topped with broccoli raab, fresh mozzarella, tomato; side of potato croquettes. My family got variations similar. Grapes, mango, Belgian chocolates for dessert.
Leftover chicken with pasta, alfredo sauce, hot sauce, herbs, minced onion, garlic, spinach, 3 cheeses of choice, salad
Cold leftover chicken, redskin potato salad, green beans.

Orange Chicken (frozen- bought at Costco), jasmine rice, steamed broccoli. Raisinettes, Hershey miniatures and strawberries at concert.
I made beef short ribs in the slow cooker. They were tough. How does that happen!

Baked eggplant (my neighbor's crops) in my air fryer with sliced tomatoes, fresh mozzarella and basil. Baguette bread rubbed with garlic and topped with tomatoes and mozzarella. Loving these flavors. Tres leche cake.
Salt potatoes are a regional dish in Central NY, primarily eaten in the summer time. Here is the history and cooking method: [en.wikipedia.org]
Well, since we have ears of corn left over from Labor Day, I'm going to make it simple and put corn and hot dogs in the same pot...
lettuce and tomato salad, broccolini & carrots, Stouffer's meatloaf.

iced hibiscus tea, ginger cookie
Salmon filet baked with lemon and dill, mashed potato, Souuffers' spinach souffle. Making enough to have leftovers in a couple of days.

Does anyone know what, exactly, a la Jeanette means in cookery? Pepin christened some egg dish with the Jeanette moniker, Christie mentions Sole a la Jeanette in the introductory Tommy and Tuppence book, and I found other fish recipes online for something that would be easy and more or less affordable with the fish protein, cheese, bread crumbs, and a few other ingredients. Anyway, whenever I find out and/or figure out what it is exactly, that is what I will have for dinner. grinning smiley
