Chicken and Cilantro wonton soup, veggie spring rolls both from COSTCO. My Mom and I made veggie lo mein with tofu. So delicious. My Mom has the most impressive biceps.

A sort of casserole with layers of marinara sauce, spinach, cheese-stiffed manicotti, with a few small meatballs tucked into various spaces, topped with marinara sauce and shredded mozzarella. A little garlic bread and a large glass of red wine. Tonight is the second night in a week that we have had frost warnings and the mountains to the NW had accumulating snow last week. In Maryland! It is officially casserole season!

Veggie Linguini with garlic goat cheese. "Bare Chicken" cutlets baked in air fryer (Costco).
A main dish salad of napa, roasted sweet potatoes, and freekeh tossed with a honey lime vinaigrette. (Thanks to @ Shop-et-al) a frosted brownie for dessert.

Making a new batch of chili with both black and pinto beans, plus meat. A bowl of chili with some cheddar cheese on top, a side of taco chips and a glass of red wine. Staying home on New Year's Eve and hope to stream an Astaire and Rogers musical.

I looked for shortcuts today. Chicken parmigiana (with pre-cooked breaded chicken cutlets and bottled sauce), home made Raviolo from the Italian store, fresh mozzarella cheese. Arugula salad with Balsamic dressing. Wished we had bread but was not about to run out. It was so good! Sliced fresh pineapple and the last of a fruit tart that #3 brought home Sunday.
Have been dreaming of Chinese for weeks... see the spring rolls on the plate? They are waving over their buddies, prawn in spicy sauce, to join them. Prawn invites mongolian and asks for extra scallion and cayenne. Cayenne orders a veritable trough of the tea and promises to share with chicken... but never decides which type of chicken... so shop slips back into the reverie where she can afford this food... *sigh*

Parmesan crusted chicken, linguini with tomato sauce, parmesan cheese and basil, roasted asparagus, garlic bread, fresh pineapple and all sorts if chocolate from Christmas.

Veggie lo mein with tofu. Veggie gyozas. Expensive chocolate bon bon cookies that were bland. Delicious oranges. Went to a great Japanese market today and had fun.
