Don't know. I do not feel like prepping and cooking anything. Hot as heck outside although it's low humidity, YAY. My neighbor's huge bottle gourd/squash is sitting on my kitchen counter. I am overwhelmed by its size. The recipes I googled call for curry which none of us like. Aside from steaming, anyone have ideas?

A couple of days ago I poached 4 very large chicken thighs. So, tonight I am trying a new (to me) way of using some of the chicken: Chicken and spinach Alfredo. I have sauteed a lot of baby spinach in garlic and a little olive oil. I will use bottled Alfredo sauce from my cupboard stock and whatever pasta I grab first. I might use some French bread to make garlic bread for mopping up. (When I buy a French baguette I cut it into usefully small pieces and freeze those.)

Tomorrow I will smoke some salmon and then I will have 2 sorts of suppers stocked up and can alternate them with very little of no cooking. Cold home-smoked salmon, store-bought potato salad, and broccoli with become the other supper plan.

Walesmaven, curious if you make a sauce for the poached chicken. I also do poached chicken as no oil is necessary, but find I need to add something to it to make it have some taste. I only have one sauce in my repertoire and would love another new idea. Thanks.
Well, first, what sorts of herbs/aromatics are you addition to the poaching liquid? That can make a BIG difference.

I tend to used poached chicken cold, sliced for sandwiches or as an entree. Also, shredded in soups. However, I just used bottled Alfredo sauce plus spinach and mushrooms with chopped poached chicken and then added cooked pasta. When I reheat this tonight I will add more garlic, but otherwise it was very good.

A good hot weather supper for me is sliced cold chicken, sliced tomato and cucumber, and redskin potato salad.

Oh so that's it. I do not add anything to the poaching liquid. I dip my poached chicken in a scallion ginger garlic sauce. Can you tell me what herbs / aromatics you use? I will give that a try next time. Thanks.
Here a recipe, followed by what I actually do.
Place 1-4 boneless, skinless chicken breasts of up to 6 thighs into a pot
NOTE: thighs will provide a more flavorful result.
DO NOT add salt to the poaching liquid to avoid making the chicken tough.

Sprinkle the meat with several aromatics such as: smashed garlic, bay leaf, 1 tsp black peppercorns, sliced ginger, fresh or dried herbs, thinly sliced onions.
Cover the chicken with water.
Bring to a boil over medium-high heat.
Reduce to a simmer. cover and cook. Starting at 10 to 14 minutes, check with a meat thermometer. When it registers 165F in the thickest part of the chicken, it is done.
Remove from the poaching liquid to a plate to cool. Transfer to an airtight container and refrigerate.

I tend to use dried herbs and avoid strong ones like ginger in the poaching process. I may use the following combination: peppercorns, ONE bay leaf, garlic, a small amount of poultry seasoning, dried parsley, dried clery flakes,.

Fave fast food salad. There was a power outage and we cold not access enough food and beverage while leaving 'fridge and freezer closed. So, we had this treat. Even better, during the outage I was able to accomplish quite a few tasks and walk for thirty five minutes (in small spurts). It was good.
