Beef pot roast with gravy, potatoes, steamed carrots and other veggies. It is chilly, with a brisk wind here, so comfort food is wanted. Plus, lots of planned-overs to freeze.

This is the first of what is predicted to be a 3 days spate of dreary, chilly and very rainy days. So, I have made a big pot of chili with meat, plenty of pinto beans and chipotle chili powder seasoning. Cheddar on top and a side of chips will round out the meal.

Actually cooked a meal, albeit an easy one. Brisket tips, onion, and spices in slow cooker with a side of wild rice. It felt great.
A sort of casserole of stuffed shells, marinara sauce and Italian meatballs, topped with mozzarella cheese and a side of spinach wilted with garlic and olive oil.

Eating from the asparagus and spring onion garden bounty. Asparagus, mushroom, and green onion stir fry with air fried tofu and white rice. This is the second time I've made it during my month and a half of asparagus growth. The recipe is a keeper.
Still cleaning out the pantry and the freezer. Fortunately, hubby is helping with this. "Look what I found!" "When did we get this!?!?!" Very helpful, and accompanied by priceless facial expressions.

So tonight we have the last of the chicken, quinoa, and whatever green veggie I grab first.

Yesterday I smoked about a 1 lb thick salmon filet and then chilled it. Dinner will be some of that, redskin potato salad, cucumber and tomato salad, a little red wine. Yes, red with smoked fish!

Hubby took the leftover brown sauce from Saturday night's carry out Chinese and added it to a stir fry of Chinese greens/black beans. He served the dish over the leftover white rice.

I just deeply browned 6 large chicken thighs and then popped them into the oven. Two for dinners tonight and Sunday; four to freeze for future hot or cold suppers. Tonight I will have one with steamed green veg TBD and mashed potato. As the days heat up (and up and up) the idea of cold chicken or chicken salad for supper sounds really good.

Sounds good, Wales! Our six chicken thighs will not last one day. Today, I am figuring out how to add a bit of powdered turmeric to my usual herb blend for chicken. I feel good about the proportions and can always consult any of the many reliable websites for more confidence, I mean information, if I should need it. Tomorrow, I want one of the sweet turmeric blends and will stir it into oatmeal. Call me odd, or laugh, about my experimental Sunday Sweet Turmeric Oatmeal breakfast for dinner experience.

Once again I am "cooking ahead." I have assembled a batch of chili with black beans that fills my 4 qt slow cooker and set it to simmer for a few hours. Some for the coming week; lots for the freezer in 2-meal sized packages. Will serve with sharp cheddar on top and taco chips to dip. To me, Tex-Mex is good in cold weather and hot weather.

Did not get to the oatmeal experiment. That can wait. I chose yet another pasta recipe to use up ever more items from the pantry. We are getting there..... and will finish with dinner and a movie on or about Tuesday. This will involve Jack Black in 'Nacho Libre' and black beans in the massive pile of nachos. Then, we will be free to decide how next to fill the pantry.

We have savory oatmeal for dinner about once a month. Ours usually includes steel cut oats, onions, garlic, some type of greens, maybe mushrooms,and whatever spices inspire me.

As little as possible to safely take the daily rations of horse pill I mean antibiotic. I am not hungry! I must eat a little something for the sake of the meds. Doctor's orders. !!!!! Hmm. Oh, I know! I can have tomato soup with herbs and extra tomato. This always goes down well. All is well.
