I am not really sure about what meal I am going to eat for dinner. Maybe some bread I guess. I am also thinking of light meals such as salad? Well, if it is considered a light meal.
Splitting a Raising Canes combo (drive-through shop) with Hubby. Supplementing it with additional vegetables and whatever else we have in the house so we're not hungry at the end of the meal.

The last of the home-smoked salmon, served cold, with olive, cucumber, artichoke tapenade, some pita, and a little each of 4 kinds of hummus (Aldi strikes again!).

Wednesday dinners are not mine. Husband's making his usual burgers, oven baked fries, pasta, and salad. I am full even with the tiny portions I had.
Hubby requested BLTs, cole slaw, and fruit salad for his birthday dinner. And of course cake and ice cream.

First effort with quantity of lean/green meals. Wish me luck. For the first batch, I chose boneless, skinless chicken breasts, brussels sprouts, and green beans. I am using compartmentalized, lidded containers that have just enough room for one serving of chicken and a large serving of green veg. This is the first test of everything, including how much freezer space this will use. Then, I can figure out how often to do this and still have space for food that only hubby eats. Go me. Go away, blubber and time-consuming cooking that detracts from books and projects!

I haven't been doing much cooking because of my back. My surgery will be in August. I have been using a food delivery called Factor. All I have to do is heat the food. It's worked out pretty good.
Cold roast chicken, steamed fresh asparagus and something else TBD.

Party of 10 at Benihana yesterday. Happy Father's Day to all who celebrate. Tonight, we've got to get to Moe's. Hot and humid today.
A few sips of the nourishing plant-based meal replacement beverage. (Some of it flew and decorated my work space when I was shaking it up to re-blend it at work. The lid popped mid-air and gave a bit of a show. It is not supposed to do that. It's okay. It was easy to clean up the mess, and I got an additional twenty steps or so while fetching clean-up supplies.)

Chicken fried rice. Dried bean curd, lily root, Shitake mushroom and bitter melon soup compliments of my Mom. Everyone loved the soup except me. After a lifetime of lily root and dried bean curd, I will eat it it but not so loving it. Very cool here weather wise and loving it. Had to get out extra blankets once again.
Veggie burgers with protein sprouted bread (Have been buying for months from Whole Foods), pasta, and salad..All made by my Wednesday Chef husband.
Split pea soup (vegetarian, with liquid smoke for 'ham' flavor). Some type of salad on the side.

A nice cold summer supper bowl of homemade yellow rice, stewed lamb, feta cheese crumbles and Kalamata olives, with a side of tomatoes and cucumber with a tiny bit of lemon/olive oil dressing. A little pita and perhaps some hummus. A nice smooth red wine blend that I have to thank Honney for mentioning here over a year ago. (Maybe 2 years ago ?) It has become my go-to wine for most suppers.

Twice cooked pork with peppers and broccoli, some leftover rice.
Over 40 degrees C here today in the Pacific Northwest (Vancouver Island). Not sure about the conversion to F degrees, but I think it's about 685 F? lol
