The leftovers were darned delicious! One of the new ingredients gave a nice kick.

I also posted this in the "Recipes" thread, but want to share here for anyone who loves soup!!!

Well, my friend and I had lunch at Panera Bread this past week, and I decided to try their Autumn Squash Soup. OMG....it was DELICIOUS!!! For any of you that enjoy soup, try this "copycat" recipe I found online. I made this myself last night....using the apple juice, as I did not have any apple cider. I also used the prepped and chopped butternut squash you can find at the grocery store. I did add more brown sugar, I added a total of 1/4 cup of brown sugar, and did add in about 1/2-3/4 cup of heavy cream. I also added a pinch or two of cayenne and a few shakes of black pepper. YUM YUM!! Here's the link to the soup...hope some of you try it and enjoy it!!

I guess somebody chopped up a bunch of veggies for stir fry, so that’s what I’m having. Last night it was vegan mushroom stroganoff.
Menu went from flatbread and Caesar kit from Aldi to Five Guys back to Aldi food (restaurant was closed due to weather).

Stuffed green peppers with Jasmine rice, black beans, tomatoes, corn, avocados, cheddar and cilantro. DDS made chocolate dipped strawberries. Will peel some oranges as well.

I am making chili with a pork chop, ground chuck, crushed tomatoes, tomato paste, cumin, oregano, chili powder, green pepps, scallions, bay leaf and garlic. I will also make rice and put some sour cream in chili. smiling smiley

Tofu with peas over Jasmine rice. Sunday was a large takeout order of boneless chicken wings. Sauteed some fresh asparagus along with garlic angel hair pasta.
Texas Gumbo frozen family meal. It was the most delicious prepared, frozen dinner I have ever had. It tasted fresh and homemade. I am not cooking as much because I am in too much pain right now. Hoping the back surgery will be soon. My appt got cancelled during the cold weather and rescheduled to March 4.
Tonight was going to be a mushroom Swiss (ish) omelette with a Muffuletta topping.

What went wrong, way...no...WAY wrong:

I dehydrate my fresh mushrooms so they don't melt before I use them. I sliced them and put them in hot oil. They caught fire and burned.

I could not open the jar of Muffuletta topping.

The shredded Swiss turned out to be a shredded Mexican cheese blend.

Ranch scrambled eggs for dinner.

Came home to the aromatic smell of onion soup. Topped with toasted baguette with Gruyere, Fontina and mozzarella cheese.
Tomato and spinach salad; gratis of Dd#1. So delicious!
Vegetable curry made with green curry paste and a pouch of powdered coconut cream. Served on top of brown rice and topped with avocado and cashews.

Hot dogs with sauerkraut, coleslaw and homemade french fries. There were baked beans on the menu as well, but somebody forgot to make them. Still good though.
Finishing off Uncle Julio's enchiladas and bean, plus Aldi guacamole with Fritos.
