So healthy, it's disgusting! Despite best efforts to offset the cardboard taste, I am stuck with plant protein beverage with added fiber and low-cal coffee additive. Trying what looks like a simple recipe for stacked chicken enchiladas with black beans. I had some leftover roast chicken in the freezer, so this is pretty much an "off the shelf" dinner. Making enough for 2-3 meals. Big Green Bay Packer game tomorrow, so having something prepared ahead will be a major plus.

Stuffed peppers, Mexican style with quinoa, chipotle beyond meat, black beans, mushrooms, etc. Good but super spicy (because the cook added a lot of spicy Texas style salsa to it.)

My inspiration ingredient was the Five Guys fries left over from last night's shop. To go with them I made some white bean cutlets (which included quinoa and wheat gluten to give it a nice chew) and some roasted bok choy.

I am baking chicken thighs with orange pepper, jalapenos, scallions, carrots and brown rice on the side. I'll chop fresh cilantro for the top.
Tonight was crab legs. Tomorrow will be a ground chicken stir fry.

I browned some scallions, olive oil and garlic, then added some Classico roast garlic sauce to some cooked raviolis. I baked it 350 for 20 minutes. MMMMMMM good. smiling smiley
? If .lucky, or just working late, I might get good restaurant food. If I finish all my work before dinner, I will make whatever my sleepy little self can produce extremely quickly.

I made ranch pesto chicken in the oven. The crock pot version was hit or miss.

Dinner was supposed to be soy braised mushroom noodles, but they disappeared somehow.

I made turkey stir fry, but won't make it again.....lol. I like walesmaven dinner so much better......smiling smiley Roast chicken is my favorite. Guess I am a cheap date.

Tonight was a stir fry with new ingredients: dark soy sauce and XO sauce. It tastes exactly the same, so I will see if the leftovers are different.
