What are you having for dinner? AGAIN!

Well I love rice, especially brown rice, so it sounds like my kind of thing. Is it a grain or a legume, I wonder?

I was just reading on it and the vitamins and other benefits of barley are off the charts!
The piri piri hens were amazing. The sauce was spicier than I remembered, but it was so good. I just did them on a bed of taters, onion and giant brussel sprouts..seriously, those things looked like small cabbages!

And oooohh Beef Barley sounds really nice on this rainy day.

With inspiration from CoffeeQueen, I made honey garlic sriracha (instead of teriyaki) chicken in the slow cooker. I drained the chicken and finished it in a hot oven. It was too slimy for me coming out of the cooker, but it browned and crisped up nicely. It was still falling-off-the-bone tender. Udon noodles and sugar snap peas on the side. Toasted sesame seeds and green onions sprinkled over everything.
Next time you decide to do a chicken in the slow cooker like that, I suggest maybe trying cooking it plain so you can save all that great stock and freeze it for something else down the road. Then you can add your honey, garlic, and sriracha (or whatever else you use for seasoning) during the oven browning. That flavor profile sounds really good.
Good idea. I have ziploc quarts and gallons of different stocks, frozen flat. They're stacked high, taking up half a shelf of the freezer. I love using the stocks and knowing that I haven't wasted anything. But, now I'm kind of wishing I had that space for meats.
I love barley, but I forget to use it. When cooked correctly, it's chewy. I use it instead of brown rice. It's very filling.

Tonight I had mushrooms and spinach for dinner.

Ah, yes. Well I guess you could use some of that stock for some soup or a rice dish, or something? Do they make small freezers? I have a chest freezer that's about 4 feet tall and 3 feet across each way. I think I paid less than $200 for it. I wonder if they make any smaller ones?
I just found one on Amazon for $169 with free shipping. I didn't look further, but there are probably other ones and maybe there is a less expensive option. I bought mine about 10 years ago from Best Buy, but they are sold out. You could check Lowe's or Home Depot as well.

She might not have liked the barley? Maybe next time make her some white rice and make the soup separately, then you can cook barley and add it to yours. Or get her some nice bland egg noodles, LOL.
Barley pairs really well with mushrooms.

If Ann didn't eat it when she was twelve she probably won't like it. I froze most of it and am finishing up what I didn't freeze. I made her a salad. I'll be really happy to pull that soup out of the freezer in a few weeks. She does love homemade chicken noodle though.

My sister is cooking filet mignon, potatoes, and vegetables with apple strudel tonight. I am bringing the wine.

I made a split pea soup with cured pork tenderloin, potatoes, carrots, and onion in my crockpot. It looks awful but tastes great. Hubby is eyeing it suspiciously. I told him to close his eyes when he eats it, LOL. I will probably end up having some for lunch tomorrow and freezing the rest if I can't convince him to try it.
Pulled pork sandwiches on some nice buns with freshly made cole slaw and pasta salad. Cherry cheesecake for dessert with coffee. Threw a pork butt in the big crock overnight and today pulled and made up the sauce for it. Food processor made quick work of the slaw, mandolin made quick work of the additions to the pasta salad. Washed pots, pans and utensils as I went along so all but the last batch have dried and been put away.
We finally had the boxed steaks. They were tender! Oooooohhhhhh! Mmmmmmmm!

Tonight was onion dal for dinner.

Dal is Indian for lentils.

The recipe I have called for 6 green onions. I didn't have 6, so I used a whole onion instead.

I made jalapeno and cheddar corn muffins today. I had 2 extra jalapenos and cheese so I made little half poppers wrapped in bacon in my air fryer. OMG so good. My boyfriend is bringing chili, so the corn muffins will go great with that. His Dad always sends me stuff down with my BF, but he's been cooped up for over a month and has been cooking like a madman. He sent a pic of his cooler that he's bringing and it looks like take out for 20 lol. Can't wait!
Just ordered a big box of produce from the market to pick up on Saturday, can't wait to see what they put in there this week.

I used to make bacon wrapped jalapenos stuffed with shrimp and cheese. Damn good.

Marie Callender's pot pies for dinner.
Yum, I will have to try it with shrimp next time. Do you chop up the shrimp or leave it whole? Whole jalapeno or sliced in half?

Shopping the South Jersey Shore
Whole jalapenos, cored. I get huge ones and leave the shrimp whole. I use a cream cheese parmesan mixture with some breadcrumbs added to keep it from oozing out too much. Partially cook the bacon to get rid of some of the grease before wrapping them but not so long that the bacon isn't pliable. I use toothpicks to prop them up so the hole is elevated and to keep the bacon in place.
Hamburgers, baked potatoes, and spinach salad.
