Joint venture with my sis for Mother's Day. The menu included bacon wrapped peppers, spinach squares, squash casserole, green bean casserole, pasta salad, deviled eggs, steak and sausage. It was all delicious.
I have fried up some rock fish and fresh shrimp to add to the leftover paella. I might also steam some green beans and add those, since that is traditional in some versions.

Blackened Salmon with a sweet chili sauce. On top of charred corn, quinoa, spinach, and edamame. On a shop. Excellent! And, an easy report.
Roasted the veggies that went back and forth in my lunch bag for a couple days.
Roasted some leftover potato with them. Baked some fish on same pan for last few minutes. Tasty enough to make on purpose!
I am raiding the freezer for some leftover pot roast and gravy. Will have that with potato and steamed fresh carrots.

Making lentil soup with red potato, carrots and whatever else I can throw in as well as Turmeric and no salt.

I dunno yet. I will be on the road and near numerous restaurants. The sensible thing to do is fast until I get home. The fun thing to do is try a new restaurant.

We ususal eat out on Friday becase by the time my hubby gets home for work and then drive a hour both ways to pick up our son from work . It too late to cook.
Chicken burgers, on fresh buns. Home made marinade/bbq sauce. Oven fries, roasted beets and carrots.

Later fresh oatmeal raisin cookies. Read they should chill for several hours first.
We had ice cream for supper last night , we had a super big lunch and did not want a true supper. Tonight I am not sure since I will be the only one home at supper time
Last night we had left over barley soup and grilled cheese. Were at an amazing brunch earlier in the day.
I will be adding fresh green beans to my carryout food from Halal Brothers. That consists of delicious yellow rice, chicken, beef, Greek olives and hummus. And there will be enough for yet another hearty dinner later in the week.

Fresh fish is on my grocery list. I will steam fresh asparagus and select a starch, TBD, to accompany it.

Tonight is "cleaning out fridge" soup, La Brea French bread...making oatmeal cupcakes healthy style with applesauce, no sugar...fingers crossed.
