Soup was very good - here is the recipe CoffeeQueen
Recipe called for one pound of boneless, skinless chicken breasts, I used chicken thighs and took the meat off the bone before adding the evaporated milk.
Layer the chicken on bottom of crock pot. Season the chicken as you wish. I used salt, pepper, garlic and rosemary.
Add 2 cups of chopped celery, carrots and onions. I grate the carrots, just like it better.
Add 4 cups of chicken broth. I added another cup later when it looked like it needed more.
I added thyme and basil to the broth before pouring in crock pot (I used one teaspoon dried each). Also more garlic, but that is optional.
Cook on low 6-8 hours or on high 3-4 hours. I used low for 6 hours.
This is when I deboned the chicken thighs
While the chicken and vegetables cook, fry 6 pieces of bacon. Pour out most of the bacon grease, saute six ounces of spinach until wilted, about one minute. Probably could have used more spinach.
Add two 12 oz cans evaporated milk, one pound of potato gnocchi, bacon and spinach, cook on low for 45 minutes or until gnocchi is tender.
