Very hot, muggy weather has returned with a vengeance. So while I write reports today I am taking breaks to prepare and cool 1 hard boiled egg, one boiled new potato, 2 baked small wild caught salmon fillets , a handful of fresh green beans (blanched) and a red wine/mustard vinaigrette with a little anchovy paste whipped in. . This evening I will assemble this salad nicoise to have with a little French bread and red wine. Any leftovers will reappear for Saturday supper.
On days like this I really appreciate having a large toaster oven that can really be used to bake or broil without heating the stove. As a bonus, it is also soooo much more energy efficient that the big oven.
