Tonight is BJ's Brewery, I choose Wednesday for their special double pork chop/mashed potato's and salad.

I made baby back ribs with a mustard-based barbecue sauce and a side of risotto-style quinoa/brown rice and sauteed fresh spinach with a creamy feta cheese/roasted garlic sauce. Yummmmy.

Tuesday was sonic night until my son begin to work a overnight shift so now I make hambugars and cheese potatoe tots on Tuesday night.

iI am having orange chicken , rice and corn with stawberry shortcake foe dessert.

Popped into Sprouts to pick up coffee and saw they had wild Salmon on sale for 5.99pd, from Chili, so I got a pound for tonight, mashed potato's, green beans.....eating early.

Very hot, muggy weather has returned with a vengeance. So while I write reports today I am taking breaks to prepare and cool 1 hard boiled egg, one boiled new potato, 2 baked small wild caught salmon fillets , a handful of fresh green beans (blanched) and a red wine/mustard vinaigrette with a little anchovy paste whipped in. . This evening I will assemble this salad nicoise to have with a little French bread and red wine. Any leftovers will reappear for Saturday supper.
On days like this I really appreciate having a large toaster oven that can really be used to bake or broil without heating the stove. As a bonus, it is also soooo much more energy efficient that the big oven.
