Zucchini boats and angel hair pasta today. That was supposed to be yesterdays meal but I got a little carried away with the broccoli casserole (made enough food for a family of 12 and we're a family of 3) so we had leftovers yesterday.
I plan to pick up some rare roast beef "Italian style" when running errands today. I will have that with mashed potatoes and a green veg TBD.

When they put me the "home', i will miss my home cooking..but, i know if I have 5 Grand a month, they hire a top chef and the food is pretty good..but still, nothing like the real thing. Tonight is grilled tuna on a flour tortilla.

Slow cooker tri-tip, black beans, corn, peppers, cooking for 10 hours, then a wrap taco style with enough for the weekend. Bought the tri-tip on sale for $2.77, beat that, I dare you!!

My local supermarket had breast of duck on half price because it was nearing its "best by" date. I grabbed two and froze them. Tonight I will roast one and have it with garlic and rosemary couscous (cooked in homemade chicken stock), and wilted spinach. A little red wine, also, I think.

I have started looking at the sale meat section of our Kroger. There can be some great deals there!

If you have an Aldi market within 20 miles, it will be worth a trip once a month for BIG savings. Most of their meats come in vacuum sealed pouches so they will withstand months in the freezer without any loss of flavor or texture. Excellent coffee at ridiculous savings. Condiments, cereal, frozen foods, OJ (not from concentrate), cheeses, sausage, and produce, are good quality and big bargains.

The closest one to me is an hour away, however I am going there on Thursday for a trip to Sam's Club so I might stop by and check it out!

The coffee in the big red, round can is better, and less expensive, that the club brands that I have tried! Be sure to take shopping bags AND a quarter. They use the European system where you insert a quarter to obtain your cart and get it back when you return the cart.

I have a tomato that I need to use up and some pesto that must be used or frozen. So, pasta with pesto and chopped fresh tomato it shall be. It's actually cool enough today to think about soup, but these leftovers are calling my name.

I took your earlier recommendation about their stew beef and used it for bgriffin's beef stroganoff and it was soooooo tender.

I wish that the new Aldi market that will be 1.2 miles from my home would get open. The remodeling of that site seems to be taking forever!
