Yesterday had food from a lunch at a local Tex-Mex restaurant: cheese and beef enchiladas, refried beans, guacamole and taco chips with salsa. Quite bland compared to my homemade version of enchiladas and sauce. I am inspired to slow roast pork in my Crockpot and make some at home.

I have a couple of beef burritos that I will prepare "enchilada style" with lots enchilada sauce, cheese, and a side of re-fried beans.

In the mood to cook, making a homemade crab and shrimp alfredo with sauteed peppers, onions and mushrooms over rotini pasta, salads and a pear pie.

It's a gray, sleety sort of day here, so a hearty soup is in order. I will reheat a big frozen portion of that potato-bacon-cheese soup that I made a few weeks ago.

Last night was a roast chicken with roasted butternut squash and Thanksgiving dressing from the freezer. Tonight the leftover chicken will become white chili and tomorrow night the leftover squash morphs into risotto. It's not often I plan a few days ahead but a March cold snap with snow made me just want to stay home for a few days.

Bonefish Grill tonight. And, as I made small talk with my wife's friends I wondered to myself, "Who shops the Outback chain?" This hobby has ruined me.

I am assembling a slow cooker to work while I go into the city to do a couple of video shops. Pork stew with carrots, onion, celery, mushroom soup, red wine and seasonings yet to be determined. Will add some red potatoes when I return.

Leftover mashed potatoes and turkey meatloaf. Since none of last night Brussels sprouts were leftover, the green is fresh haricot verts with bacon and pecans.

Salad. It is spring-like and it feels like salad and the sunshine just seems to whisper, "salad" to me... smiling smiley

Because I don't have time to cook it tomorrow, tonight we had our St. Patrick's corned beef and cabbage meal.
