I just wonder why they don't melt the cheese on the burger patty. It's just place on the bun with all the other toppings.

The locations I've been to, I believe the team member melted the cheese onto the beef patty. I remember some other old non-Five Guys shops where a cold slice of rubbery Kraft cheese was included in a burger or taco!
