How has the CoronaVirus affected you?

With meat shortages looming, perhaps we should start a "Share your favorite vegan recipe" thread. Myself, I had to give up eggs recently, among other things, and I really miss my spinach and feta cheese frittata. I saw a recipe for one with mushrooms and baby spinach with vegan eggs made from a slurry type thing of chickpea flour that you could scramble like real eggs. The pictures looked very good.

You can be the first, kimmie, go ahead and start it and I am sure others will add to it. I used to have some good vegan recipes but these days I have animal proteins in almost everything. If I think of anything in the near future, I will chime in to that thread.
The problem with a feta cheese frittata, even without eggs, is that the feta cheese renders it non-vegan.
You would have to use a fake cheese...so I guess the thread could be called " vegan or almost vegan recipes".

I've been warning ppl on my FB and other forums about the looming shortages. I used to be in the food biz. Almost 12% of the beef and pork and chicken we eat, has been affected by the shut downs of the food processing plants. That is HUGE. In Walla Walla county yesterday, a Tyson plant shut down and it produces enough beef in one day to feed 4 million people, and employs 1,400 workers.That plant closure didn't hit the national news.
What I've noticed is that people on both sides of the political aisle believe this.

Yeah, I heard about that Tyson plant. My husband and I were discussing yesterday. In my mind Tyson = chicken. Never even thought about beef. I am going to rearrange my freezer in the garage to consolidate and make room. I found Black Angus whole beef tenderloins on sale for $9.99 lb and ordered one for my next curbside. I will cut it up and freeze steaks and use the scraps for spaghetti sauce. Also ordered more bacon (on sale for $2.99 lb). I've got plenty of chicken and pork and also have a few packages of ground beef I bought for $1.99 lb.

Not on this forum. No different than The View which really should be titled the only view.
No matter how many times sensible people try to change the subject and get it back on track, people love to beat a dead horse and try to instigate. There are plenty of diverse and opposing views on the forum, but it's best not to discuss them. If you want a political forum to argue and debate, they have forums out there for that. So at the risk of being repetitive (again and again and again), it would be great if people could not discuss politics here. Please and thank you.

So back to the subject matter: my nephew in Florida is recovering quite nicely from COVID-19. The belief is that he caught it from his son who was partying on Panama City Beach during spring break. No one else in his family had any symptoms, but none of them were tested, either, so they may have just been asymptomatic. My nephew is in his early 40s and is in the AF. He is strong and fit with no other health issues, yet he became very ill. I definitely don't want to catch it!
That is what I used to put in it but as I said, I had to give it up. The vegan recipe I found only has mushrooms, baby spinach, onions perhaps, and the chickpea mixture.

The local news ran a story last night about a thing people are calling COVID toes. Has anyone else heard about it? It's these purple spots and/or lesions people are getting on their toes, and health experts think it has something to do with the virus as this condition has been springing up quite recently.

Yes, it started with gluten. Now it's eggs and dairy products too. I can only have peanut butter in small amounts, and peanut butter, in my opinion, is one of the 4 main food groups. I can and do eat meat so I'm not really vegan, but I've been exploring vegan recipe blogs since they don't use egg or dairy. What an adjustment to make during a pandemic...lol.

Yeah, I had heard of it. My husband had some dark red spots on his feet and gets tingling in his feet occasionally, so I was googling about it and that popped up. But he has had no other symptoms and we both have been self-quarantined since March 27th, so it's more likely related to when he was climbing roofs all the time for his insurance inspection job since the tingling and red spots have been there for months.

What an adjustment to make ANY time. Celiac is bad enough, but now the rest, ugh! Have you tried non GMO to see if that made a difference? Just wondering if maybe organic and non-GMO would have different results with eggs and dairy.

No, I didn't. Perhaps I should try organic eggs. I tried sheep's feta as I have read that is easier to digest, but I had it with an egg so that's probably why it didn't seem to make a difference.

I'm sure we will also see a group of health-related issues from the experience of sheltering in place.

My back went out earlier this week, which I assume is because I have no access to the gym. My exercise has been limited to walking and biking the past 6 weeks and so now I'm rearranging my home to allow space for yoga and stretching...to keep my back strong.

While the issue is based on an old injury, it's definitely COVID-related that I have to deal with it right now.
The blurb I read said this has something to with clotting issues that some covid patients are experiencing.

I bought a TON of soup right before we locked down. Regretting some of them. The "idea" sounded good and the pics looked good. Actual taste: meh.

One company's soups actually exceed my expectations: Progresso. That's been the odd-ball.

I recall hearing about a Tyson shutdown. But, I'm not sure if it was that particular plant.

Smith and Tyson have some closures and I know they are big names. I've sent word of possible meat shortage to family.

When COVID-19 first started to scare me, I actually went into fiberous foods panic buying mode. I was so worried I wouldn't have enough fiber (which helps facilitate smooth gastro functioning) and that buying certain veggies (e.g., broccoli and lettuce) would be unsafe (harder to "clean" ).

I bought up a ton of popcorn, frozen veggies, nuts, real fruit bars, veggie soups, whole grain bread (frozen now), etc.

Thankfully, we have plenty of meat and protein-alternatives, so that's not a big issue. Although, if the freezer breaks or an outage causes a spoiling of food, that'd be a big chunk gone. Still have dried and canned foods to last a good while.

To everyone else:
My nurse friends are slowly getting back to normal after a battle with this illness. Keeping fingers crossed that we have reached the peak in cases in most areas.
Let's hope. Although there have been reports that beaches have filled up in some places. I have to say, though, that some stores are doing great about sanitizing. Wegman's sanitizes everything the customer touches between each customer on the checkout areas. They have my business!

I think it will be a while before we can really be back to normal business. Italy has been in serious lockdown since March 10th and still is averaging 3,000 cases a day. CA, with 2/3 of Italy's population, is setting in at 2,000 cases a day.

The US overall is being more cavalier and is set to hit 1 million cases by end of weekend, while it was only at 900K on Friday, so that curve is still going up, rather than down.

I went out to do some shopping yesterday and noticed a few things; The more upscale the store....the better the sanitization appeared to be. The discount stores had no line to get in, but very long lines to check out and I did not see anybody sanitizing. Shoppers were grabbing carts from the parking area and little distancing was applied in the store. I stopped into a one of the more expensive grocery stores to get a few specific products and it was a different scene; Organized line with clear markers to enter the store, directional signs for each isle, staff cleaning each cart and basket handed to guests who entered, and the register area wiped down between customers.
Here is one of our summer "favs"...No cook pasta. Baby tomatoes sliced in half - 1lb, (I like the heirlooms, because they are so pretty) fresh garlic chopped, 5 or 6 slugs olive oil, handful of fresh basil cut, 1 tbl spoon balsamic vinegar, salt, pepper. Crush all in a bowl and let sit, while you boil 1 pkg spaghetti. Serve with fresh Parmesan on spaghetti and on top. Perfect! Even better if you add shrimp to it. Shrimp seems to be still pretty easy to get - I always keep a few bags in the freezer, because we like shrimp everything! Spaghetti is hot, but the sauce is room temp. I always add a little oil & Herbs de Provence to the pasta....smiling smiley
In my state, most new cases are clustered. No one can tell us all the details of this situation because of HIPPA, but in that county they are testing extensively and taking drastic action to create new distances between people who had been able to gather in some way or ways until recently-- despite all the mandatory and voluntary closures.

Today, it took an hour to get a cuppa. We had gone to a nearby town for a merch re-visit and wanted something for the drive home. At the first place, the hubby gave a downright genius assessment of what the hellllllll were they thinking when they built this place because just look at this snaky line it is all the way into the street and down a block. !!!!! The second place was a convenience store; it was well signed with the news that it was not permitted to sell dispensed coffee and other beverages. !!!!! The third place was like the first, except on a major street and the drive-thru line there ended not more than one inch from the curb lane. !!!!! The fourth place had one car length left off the main street, and we took it! I tried to explain that these were covid lines and not a design flaw, but to no avail. After hubby had his cuppa, he was more matter of fact and merely remarked that this tea was better than some other brand and he really did not mind waiting for it. *sigh*

So if ever coffee shops can re-open their innards, their drive-thru lines should become shorter. If not, they might have to build more cuppa kiosks, or something, to spread out the lines of coffee traffic.
