I don't think it would exclude you, but it might make shops pretty difficult. Lets take a fairly simple gas station I do. One of the questions is whether I was greeted over the intercom when I was at the pump. (I never have been, but I'm not sure I could honestly answer the question if I could not hear.) I assume you lip read so when you went into the convenience store part of the station you could report the greeting, whether there was an upsell suggestions of a snack to go with your drink (or vice versa) or of a lottery ticket. You also would be able to mention parting remarks. But that one question about the intercom might mess you up.

The last report I wrote up asked if there were any parting remarks. There were not until I was close to the front door and heard the cashier behind me call, "Have a great afternoon!" Since often we are evaluating friendliness of staff with specific questions such as that, shopping could be a challenge for you.
I agree with @Flash, there could be some challenges. If you do phone shops, you might use P3 or some sort of translation-to-ASL system. In that case, the exact text with quotes isn't the same as when you speak (or lip read). The grammar of signs and spoken English is harder. So questions asking for exact quotes would be harder. If you have a support system where you could audio record your in-person interactions, to verify whether things you cannot read or machines made any sound, then you would have to have a stronger microphone to have a large range.

It all depends on the shop.

Agreed. Some shops will also ask you to report on which music was playing in the background and whether or not it was pleasant. There are apps that you can get that will tell you which music is playing in most cases, but whether or not it is 'pleasant' is relative, and if nothing is playing at all or if it is just very low, then you might possibly need someone else to tell you. I would look into a company called Amusement Advantage to see if they schedule any shops near you---I think you might be able to work something out.
