Simpler ones include convenience stores, gas stations (if you are comfortable with photos), banks, some grocery stores, maybe cell phones, and telephone shops (calling someone). Try to get the instructions before applying. Some MSPs provide this as a matter of course, some will do so on request.
Also I would ask, "What are you good at?" If you have banking experience, then banking shops should be easy for you. If you waited tables, especially in a corporate restaurant, then counter style or fast food restaurant shops should be a piece of cake. Consider seeking out something you have experience with for that first shop. But by all means go out and do one.
Once you get one, read the instructions forward and backward until you know them by heart. Consider a dry run at another store or perhaps a competitor's store (if that makes sense).
Nervousness is to be expected. Have fun with it.
